Green Tea Flavored Recipes?

September 28, 2010

Hi everyone, I was wondering if anyone knew about any good recipes involving green tea flavoring? I heard of people baking green tea cheesecake soufflès or green tea cookies, so any sort of green tea pastry or dessert would be great.

I bought a small canister of Green Tea Matcha Powder at a Japanese market, and I know it’s good stuff because it was pretty expensive, so I just need to know recipes now.

Steamed Green Tea Cake with Black Sesame Seeds
Healthy, and easy-to-make cake

* 1 1/2 cups cake flour
* 1/2 teaspoon baking powder
* 2 teaspoons powdered green tea
*
* 6 egg yolks
* 1 1/4 cups white sugar
* 2 1/2 tablespoons water
* 1 1/2 teaspoons vanilla extract
* 6 egg whites
*
* 2 teaspoons black sesame seeds, garnish

1. Set a bamboo steamer large enough to contain a 9×9 inch pan over simmering water. Sift together the cake flour, baking powder and green tea powder. Set aside.
2. In a large bowl, combine the egg yolks, sugar, water and vanilla extract. Using an electric mixer, beat on medium speed until mixture has tripled in volume. Fold in the flour mixture, mixing just until combined.
3. Beat the egg whites until they form stiff peaks. Gently fold whites into the egg yolk mixture. Pour batter into the cake pan.
4. Place cake pan in steamer. Stretch a kitchen towel over the cake pan without touching the surface, then cover with steamer lid. Steam cake for 20 minutes, or until a toothpick inserted in the center comes out clean. Cool on wire rack. Sprinkle with black sesame seeds and cut into pieces before serving.

Does decaf tea retain all the health benefits of caffeinated tea?

September 28, 2010

Mostly talking about black teas here, tea bags and loose.

Thanks!

Depending upon how it is decaffeinated, it can be good or bad. Most quality decaf teas retain about 90% of their antioxidants and other health benefits. You definitely want to go with the higher quality decaf black teas. Also, you might want to find out which tea companies use chemical processing and which use natural processing as it makes a difference. The more natural the processing used to decafinate the tea, the more health benefits that are retained.

Some teas are just naturally decaf and need no processing, and so they retain all of the health benefits inherent in the tea (white tea, green tea, etc.).

Is there any Green tea recipes ?

September 18, 2010

I have some green tea I bought, and I don’t like its flavor when drinking it as tea, is there some other things I can do with it in the kitchen or around the house?? it seems like a waste to throw a whole box or two of tea away..

If that is a green tea drink or tea bags bought from any American markets, you can add some honey, mango, or green apple to blend with in a blender.

If that is green tea powder bought from an Asian store. “Don’t waste it”. You can make lots of things with it. You can make green tea smoothie, green tea whipped topping, green tea ice cream, green tea cocktails, green tea pudding, green tea pancakes, green tea cheesecake, green tea pasta… by just adding the green tea powder.

The green tea powder is a wonderful ingredient to do with lots of things

Which has more health benefits: Green tea or chai tea?

September 9, 2010

I tried chai tea the other day, and really like the taste (a lot more than green tea). I do usually have 2 to 4 cups of green tea a day.

Is one better than the other, or are they pretty much the same as far as health benefits go?

EGCG is a potent antioxidant

Epigallocatechin gallate (EGCG), an antioxidant found in green tea, is at least 100 more times more effective than vitamin C and 25 times more effective than vitamin E at protecting cells and DNA from damage believed to be linked to cancer, heart disease and other serious illnesses. This antioxidant has twice the benefits of resveratrol, found in red wine.
Special Benefits of Green Tea

* Reduces high blood pressure. Drinking green tea represses angiotensin II which leads to high blood pressure.

* Lowers blood sugar. Green tea polyphenols and polysaccharides are effective in lowering blood sugar.

* Fights cancer. There have been many studies that have shown that green tea catechins are effective at preventing cancer.

Green tea also boosts the immune system because of its high concentrations of polyphenols and flavenoids.
